New recipe of the week #1!


Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Servings: 8
Ingredients:
1 1/2 pounds pork tenderloin
1 cup frozen corn
1 small onion, coarsely chopped
1 small red bell pepper, coarsely chopped
3 (15 ounce) cans black beans
1 small can green chiles
1 (16 ounce) jar salsa
1/2 bottle dark beer (or 1 c. chicken broth)
1 teaspoon dried oregano
1 teaspoon ground cumin
2 teaspoons chili powder
Directions:
1. Combine pork tenderloin, onion, red pepper, chiles, black beans, salsa, beer, oregano, cumin, and chili powder in a slow cooker. Set to Low and cook for 8 hours. Add the frozen corn and cook for another 1-2 hours.
2. Break up pieces of cooked pork to thicken the chili before serving. Serve with chips, sour cream, and shredded cheese.


While on maternity leave I have decided to try out new recipes. We are testing out one new recipe a week, in hopes of adding to our ever growing collection of dinner favorites! We thought this was a nice twist on the old fashioned chili! It made a TON of food - we froze half of it and are thawing it out for dinner tonight :)
